With a crispy exterior and soft interior, these Sabudana Vada (Tapioca pearls fritters) is a perfect side dish that is gluten-free, vegan, and easy-to-make!

Step 1

 Soak Sabudana  -   Rinse and soak sabudana for 4-5 hours. 

After the resting time is over, drain water.

Step 2

Toast the Peanuts -

Toast the peanuts in a pan. Keep stirring the peanuts frequently until they are slightly golden brown. Allow it to cool comfortably.

Step 3

Assemble Vadas -

Add soaked sabudana, potatoes, ground peanuts, cilantro leaves, chilies, salt, and spices to a bowl.

Step 4

Shape and Fry the Vadas - Take the sabudana mixture in your hands. Roll it into a ball and then gently flatten the sabudana ball. 

Fry the vadas at low heat, until golden brown.
